Whole Wheat Muffins

Here’s a healthy snack for those athletes!

1 egg (slightly beaten)
1/4 c smart balance oil
1/3 c brown sugar
3/4 c skim milk
1 ripe banana (mashed)
1 1/2 c whole wheat flour (I use the whole wheat pastry flour)
1 TBSP baking powder
Dash of salt
3/4 c old fashioned oats
1/2 c walnuts
1/2 c dried fruit (cranberries, cherries or blueberries)
2-3 TBSP flax seed (optional)

Mix egg, oil, sugar & milk. Add mashed banana. Mix flour, baking powder & salt and add. Add flax seed if desired. Add oatmeal, nuts & dried fruit. Put in greased muffin tin and bake at 350 for 20 mins.

Makes 12.

    hmmmm, now if we could switch the milk for soy, switch out the sugar and egg for something…idk what…this sounds like something we could be eating next week for breakfast!! hahaha
